Durch den frühen Austrieb der Reben und die Frostgefahr im Frühjahr sowie den Befall von Mehltau ist der Weißburgunder nicht gerade ein Favorit bei Winzern. Doch die Mühe lohnt sich: Der Weißburgunder ist elegant und fruchtig und kann zu vielen Gerichten gereicht werden. Er ist leichter und harmonischer als der Grauburgunder.
Unter dem Namen Pinot Blanc ist die Weinrebe aus der Borgogne in Frankreich schon seit dem 14. Jahrhundert bekannt. Heute wird diese Rebsorte auch in Italien, Österreich und der Schweiz angebaut. Etwa 3,5 Prozent der Gesamtfläche in Deutschland ist mit dieser Rebe bepflanzt. Sie ist eine Mutation des Grauburgunders und wird aufgrund ihrer Empfindlichkeit in Deutschland hauptsächlich in Baden, der Pfalz und in Rheinhessen angebaut.

Großen Absatz findet der Weißburgunder Weißwein in den U.S.A., der namentlich white Burgundy heißt und als Qualitätswein eine solide Alternative zum Chardonnay bildet.
